Cookie Extravaganza!

Well, except i’m not actually doing cookies today.  I’m doing a Christmas fruit salad.  Yes.  Fruit salad.  It’s delicious.  It’s the perfect dish for that Christmas potluck.  All you need is a Christmas bowl to put it in {which i actually don’t have.}  It’s the perfect dish for any non-cookers {like me.}

Here’s the recipe:

2 seedless oranges, peeled and cored
2 apples, peeled and cored
2 bananas, sliced
2 cups pitted dates, chopped
1 cup dried figs, chopped or 1 cup apricot
1 cup orange juice
1 cup almonds, chopped or 1 cup shredded coconut

1.  Place fruit in serving bowl.
2.  Pour orange juice over fruit and mix gently.
3.  Garnish with almonds or coconut.
4.  Cover and chill several hours before serving.

If you have a food processor thing-y that chops for you, this will take no time.  If you have to do it by hand {like i do} it takes about 20 minutes.

It’s a Christmas fruit salad because all the fruit in it is available at Christmas, it’s not actually red or green.  Here’s what it looks like:


Pretty, right?  It really is good too.  Well, prettier in real life than in the picture.  But I actually took it to a Xmas pot-luck and it got rave reviews.  Plus, people ate it.
