It’s that time of the year – the Great Cookie Exchange! Thanks to Jz for organizing this every year!
Those of you who know me outside of the cyberworld know that I’m not a big baker. Or cook. Or much of anything else domestic, and this recipe is perfect for those of us who want simple and easy.
The Red Velvet Ball
2 bricks of cream cheese
2 sticks of butter
1/2 teaspoon vanilla
1 box red velvet cake mix
1/2 cup brown or raw sugar
1 bag semi-sweet chocolate chips (miniature would be better)
Soften cream cheese and butter to room temperature. Mix together with vanilla, red velvet cake mix, and brown or raw sugar. Add 1 bag of chocolate chips. Form into a ball. Refrigerate for a couple of hours or overnight. (i put mine in a small bowl to make sure it stayed round, but i’m sure that’s not necessary.)
Roll in chocolate chips (hold some out from the bag) or chopped pecans. (i found it easier to do this after the ball was chilled, but that might be because I don’t do this kind of thing all the time.) Serve with graham crackers or vanilla wafers.

(That’s actually a half batch – i didn’t make a whole batch because i don’t have anything to do with it except eat it.)
And here’s what it looks like as you spread it on the graham crackers and eat it. i didn’t use miniature chocolate chips – my friend who i got the recipe from didn’t mention that – but it would spread better with those mini ones. Sir, however, was not daunted by the over-size chocolate chips.
